My favorite kind of pie in the world isn’t sweet
We make it in December and we both overheat
Salty on my tongue when we’re cookin’ it up
Every saucy moment with a measuring cup

Cracked like a couple Grade A eggs
You whisk me away, sweep me right off my legs
First you add the custard then butter and flour
Hard to believe that it’s under an hour

Baking up the batter slowly getting better letting all the bitterness go
Put it on a platter to savor it together the hazy glazy glittering gold

She’s the cheesiest the please and thank you easiest dish
Add the broccoli and spinach ham it up if you wish

Thyme to taste test all the fillings we whipped
One last quiche make it sloppy and wet
Watch it cool on the rack as the porcelain sweats
